A One-of-a-Kind Dining Experience at The Westgate
We are hosting an eight-week dining residency from acclaimed chef Graham Mairs — a fun, intimate and story-led dining experience designed exclusively for the cocktail bar setting.
Running just two nights a week, the residency blends Michelin level food, mixology and elements of theatre into a relaxed yet elevated night out. Expect something playful, immersive and completely different from a traditional restaurant.
THE EXPERIENCE
While guests dine at their own tables, the evening unfolds as a shared journey. Each course arrives together, each chapter of the story revealed in time, creating a strong sense of atmosphere and connection.
THE FOOD
The menu is a modern culinary journey shaped by seasonality, local produce and reflects Graham’s years of experience spent in the best kitchens in the world. Expect seven courses, delivered with moments of surprise, nostalgia and theatre. This is Michelin-level skill, reimagined for a more relaxed, human setting.
ABOUT THE CHEF
Graham Mairs is an internationally recognised, award-winning chef with over 40 years’ experience at the highest levels of global gastronomy.
Graham trained at the renowned École Lenôtre in Paris and worked alongside some of the world’s most respected chefs, earning Michelin recognition and international awards along the way. Graham represented Great Britain as part of the GB Culinary Team and has achieved over 50 gold medals in international culinary competitions
Today, Graham’s focus has shifted away from traditional fine dining and towards creating emotion through food. His cooking blends skill, storytelling and a sense of play — designing immersive, multi-sensory experiences that connect people, spark memory and put a smile on guests’ faces.
